Created by Caputo in response to problems with fresh yeast - low shelf life and inconsistent strength, Caputo Lievito Active Dry Yeast has a much longer shelf life than fresh yeast, and has a consistent strength over long fermentation periods. Moreover, it dies completely at 58°C, unlike chemical yeasts which apart from collapsing if left to ferment too much, do not die during cooking, causing digestion fatigue. Caputo Lievito Active Dry Yeast is made by growing yeast cells fed with local Italian molasses, which also gives a pleasant taste to the yeast.
